You’ll never be tired of drinking this mature pure rice sake with good acidity, representing the sake of Nada. The sake is named Kin-matsu combining Kin, the gold, and Matsu, the pine tree. Gold symbolizes splendor; pine tree, vigor and happiness. |
About the KURAMOTO(蔵元の背景について) |
Hawk is said to be the king of the birds. Above all, Hakutaka, or white hawk, is believed to be the sacred kind, which only manifests itself every 1000 years. Hakutaka represents dignity of the king and purity of refined sake.
The brewery was founded n 1862 at the bottom of Mt. Rokko where famous Rokko-oroshi gale blows down the mountain. The founder pursued the very best. The rice used is the premium Yamada-nishiki, grown in specially designated districts by contracted farmers. The water is Miyamizu, rich in minerals suitable for sake making. Kimoto-tukuri, a time-consuming traditional brewing method, is employed to achieve rich and mellow dry sake.
FUJII Toshikazu, our confident toji or sake master brewer, working for the brewery for 65 years, was awarded a medal of honor for professional excellence in 2005. During the cold winter season, the Dai-ginjo premium sake is made; the sake mash is pressed not by machine but put in canvas bags and left drip-pressed.
