Garyubai Junmai Ginjyo uses 55% of Yamada-nisiki Rice polished. Using water from the River Okitsu, known for its clear water, we used a small amount of rice, approximately 600kg, for fermentation. We are proud of our standards of no compromise and no short cuts to produce this sake. It results a high impact and aromatic flavor.
About the KURAMOTO(蔵元の背景について)

GaryubaiOur brewery was founded in 1686, more than 300 years ago, by the founder of the Suzuki family. The present president of the brewery is the sixteenth descendant of the family.

We rinse and steep the rice for a limited time in water; make koji from Yamada-nishiki rice in our own special way. Slow low temperature fermentation gives our sake a smooth and fruity aroma. Garyubai is a premium sake brewed with the traditional Nambu-Toji techniques. Nambu-Toji is a group of reputed sake masters keeping their exclusive techniques gingerly.
Garyu is a dragon hiding in the mountains waiting for rainy season. Dragons, closely associated with rain, fearlessly fly in rainstorms, and Garyu is used as a metaphor for a great hero waiting for his shining moment.

In a temple near Sanwa Brewery, there is a Japanese apricot tree named Garyubai. Local legend has it that it was planted by TOKUGAWA Ieyasu, the first shogun of the Tokugawa shogunate, when he was a young boy.
